Keto Mushroom and Leek Omelette Recipe

Ingredients:
- 1 tbsp olive oil
- 1 leek, sliced
- 4 portobello mushrooms, sliced
- 1/2 tsp The Broth Sisters Mushroom Stock Concentrate
- 1 tbsp warm water
- 3 eggs, whisked
- 20 grams grated goat cheese (or cheese of your choice)
- Microgreens, to serve
Method:
- Heat the olive oil in a medium non-stick pan over medium heat.
- Gently sauté the leek and mushrooms for about 5 minutes or until they’re lightly golden.
- Mix the Mushroom Paste with warm water and stir vigorously to combine.
- Add the paste to the leek and mushroom mixture and stir for another 1-2 minutes.
- Pour in the whisked eggs and gently push them around the pan with a wooden spoon to ensure even cooking.
- Once the eggs are mostly set, sprinkle the grated cheese over the omelette. Cover the pan and cook for another minute until the cheese melts.
