Persian Herb Rice with a Crunchy Golden Crust

Imagine the tantalising aroma of fresh herbs mingling with the rich, savoury notes of slow-cooked beef broth, transporting you straight to the bustling markets of the Middle East. This Persian herb rice, with its fluffy grains and golden, crunchy crust, is more than just a side dish—it's a culinary experience that brings the flavours of Persian tradition to your table. Infused with The Broth Sisters beef bone broth, this dish is a true celebration of taste and texture. Perfect for sharing with family and friends, this recipe will leave a lasting impression.

Method:

  1. Prepare the Rice: Rinse the rice under cold water until it runs clear (about 1 minute). Place the rice in a saucepan, adding enough water to just cover it (approximately 400ml). Bring to the boil on high heat for 5 minutes, then drain and transfer the rice to a large bowl.

  2. Sauté the Aromatics: In a frying pan, cook the onion and garlic until the onion turns translucent. Add this to the bowl with the rice. Mix in the dill, parsley, and salt until well combined.

  3. Create the Crunchy Base: Heat the olive oil and ghee in a 32cm Stainless Steel Chef Pan over medium-high heat. Once the ghee starts to crackle, stir in The Broth Sisters Turmeric and Ginger paste. Immediately add the rice mixture, pressing it down to flatten the surface within the pan.

  4. Infuse with Beef Broth: Pour 3 tablespoons of The Broth Sisters beef bone broth over the rice mixture. Cover the pan with a well-fitting lid. Cook on high for 5 minutes, then reduce the heat to medium-low and cook for another 20 minutes.

  5. Serve and Garnish: Bring the pan to the table and serve directly. For a burst of colour and flavour, sprinkle with pomegranate seeds just before serving, if desired. Optional garnishes such as cashew nuts or pistachios can also be added for extra texture and richness. This dish makes a great accompaniment to salads, slow-cooked and BBQ meats, or as a side dish to your favourite Middle Eastern meals.
