Whether it’s a laid-back lunch, a casual afternoon gathering, or hosting friends and family, this dish will steal the spotlight every time.
Serves 2
Ingredients:
- 2 tbsp olive oil (+ 1 tsp for cooking seafood)
- 1 large brown onion, chopped
- 1 red capsicum, diced
- 2 cloves garlic, crushed
- 2 tsp The Broth Sisters Vegetable Stock Concentrate (omit if you using our chicken bone both)
- 1 tsp The Broth Sisters Activated Turmeric and Ginger Paste
- 2 1/2 cups water or The Broth Sisters Chicken Bone Broth
- 1 cup risotto rice
- A splash of dry white wine
- 1/2 cup organic tomato passata
- 1 tsp The Broth Sisters Fermented Chilli Paste
- 1-2 bay leaves
- 1/4 cup fresh parsley (plus extra for garnish)
- 1 cup samphire (optional)
- 8-10 mussels
- 8-10 small wild-caught scallops
- 10 small locally sourced prawns
- Freshly squeezed lemon, to serve
Method:

Prepare the Base:
- Heat 2 tbsp olive oil in a heavy-based pan over medium heat.
- Sauté the onion, capsicum, and garlic for 5 minutes until softened.

Prepare the Broth:
- In a measuring cup, mix vegetable stock concentrate, turmeric and ginger paste, and water. Set aside.

Cook the Rice:
- Add the rice, white wine, tomato passata, chilli paste, and bay leaves to the pan with the vegetables. Stir to combine and cook for 5 minutes.
- Slowly pour the prepared broth over the rice mixture to evenly cover (do not stir).
- Bring the mixture to a boil, then reduce heat to a simmer. Cook for 15-20 minutes, checking that the rice is tender.

Add Mussels:
- Place the mussels on top of the rice, cover the pan, and cook for an additional 5 minutes until the mussels open (discard any that remain closed).

Add Samphire:
- Remove the pan from heat, scatter the samphire over the paella, cover, and let sit for 10 minutes.

Cook the Seafood:
- In a separate pan, heat 1 tsp olive oil over medium-high heat.
- Sear the prawns for about 2-3 minutes on each side.
- Add the scallops and cook for 1 minute on each side (be careful not to overcook).

Combine & Serve:
- Gently place the cooked prawns and scallops over the paella.
- Garnish with fresh parsley and a squeeze of lemon.
